Taco Casserole

INGREDIENTS

  • 1 package McCormick® Gluten Free Taco Mix
  • Ground Beef
  • 1 can (16 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) tomato sauce
  • 1 can (11 ounces) Mexican-style corn, drained 
  • 1 cup shredded Cheddar cheese
  • 1 cup coarsely crushed gluten-free tortilla chips

Cheesy Chicken Enchilada Casserole

INGREDIENTS

  • 2cups chopped cooked gluten-free chicken breast
  • 1can (14.5 oz) stewed diced tomatoes with jalapeños, drained
  • 1can (15 oz) black beans, drained, rinsed
  • 1tablespoon chopped seeded jalapeño chile
  • 1teaspoon chile powder
  • 1/2teaspoon dried oregano leaves
  • 1can (18.5 oz) Progresso™ Traditional chicken cheese enchilada flavor soup
  • 8gluten-free corn tortillas (6 inch), cut into fourths
  • 2cups gluten-free shredded Mexican cheese blend (8 oz)
  • 2cups gluten-free corn tortilla chips, coarsely crushed

 Breakfast Casserole

  • 1lb pork sausage
  • 6 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8oz sour cream
  • 3/4 cup milk
  • 8oz shredded sharp cheddar cheese, divided
  • 4 cups (about 20oz,) frozen shredded hash browns, thawed

 Pizza Tater Tot Casserole

INGREDIENTS

  • 1-1/2 pounds ground beef
  • 1 medium green pepper, chopped, optional
  • 1/2 pound sliced fresh mushrooms
  • 1 can (15 ounces) pizza sauce
  • 1 teaspoon dried basil
  • 3 cups shredded part-skim mozzarella cheese
  • 1 package (32 ounces) frozen Tater Tots
  • 1 cup shredded cheddar cheese

Chicken and Broccoli Rice Casserole .

INGREDIENTS

  • 6 Tbsp. salted butter
  • 6 cups cooked long grain brown rice or basmati rice (cooked in broth*)
  • 2 cups sliced fresh mushrooms
  • 2 tsp. minced garlic
  • 1 1/2 cups milk
  • 16 oz. (4 cups) cheddar cheese, shredded, divided
  • 6 cups chopped fresh broccoli (about 3 heads)
